As the sun sets, the colours of the Aspromonte become the prelude to the tasting menu at the Chef’s Table of Qafiz. Chef Nino Rossi narrates Calabria through instinctive, profound and surprising cuisine, awarded one Michelin star.

After an exceptional distillate or a cocktail in the elegant lounge, guests can enjoy the comfort and tranquillity of one of five double rooms, refined in both finish and design.

In the morning, the garden light and the beauty of Il Tinello provide the setting for breakfast prepared with genuine, carefully selected ingredients.

The second day leads to the Piani di Carmelia. An easy walk through the Upper Aspromonte forest winds among pines and beeches to the imposing Pietra Salva, a geosite of the Aspromonte UNESCO Global Geopark. The excursion concludes with a gourmet picnic amid the autumn landscape.

At the end of the day, the aromas of holm-oak charcoal enhance the dishes cooked over the grill at Ilici. Vegetables, selected meats and fish from the local auction come together under one guiding principle: sharing.

On the final day, guests enter the estate’s olive grove among majestic, towering, centuries-old trees, taking part in the harvest and discovering the gestures, rhythms and aromas of the Calabrian countryside.

The journey continues at the olive mill and concludes with an elegant light lunch by Qafiz, where the new olive oil is celebrated through carefully composed dishes and a tasting dedicated to its aromas, intensity and nuances.
